Ultimate Fast-From-Frozen With Extra Chicken Chicken Quesadilla

Do you like my blog entry title? I just couldn't resist putting in an extra chicken to tell you about one of my favorite things on earth to eat.

I combine three things to make the ultimate fast food chicken quesadilla at home. Start with a Stouffer's Chicken Quesadilla Flatbread Melt, then add some extra Oscar Mayer Deli Fresh Chicken Breast Strips, Southwestern Seasoned, and then top it off with crushed red pepper, the kind usually served at my local pizza place. The prep time is maybe a minute to dice the chicken and spread it around the quesadilla, and then 3 minutes to microwave the frozen quesadilla.

CAUTION: There is a similar product called "Stouffer's Chicken Alfredo Flatbread Melt" which I do not like as well as the one used for this recipe. But never be afraid to experiment (within reason, of course!)

  • Stouffer's Flatbread Chicken Quesadilla - 370 calories
  • 1/5 of a package of Deli Fresh Chicken - 66 calories
  • A dash of peppers - insignificant calories
  • Total Calories per serving approximately 436

The cost per serving at time of publication was less than $4.00 - but sometimes I can catch the Stouffer's product on sale at 2 for $5 instead of the normal 2 for $6

Fortified Gumbo

Try adding extra frozen chunked Okra, jalapeno peppers, red bell pepper and Oscar Mayer Deli Fresh Southwestern Seasoned Chicken Breast Strips (cut into small pieces)

It is very nice to have the already cooked chicken in your ice box, ready for a quick snack or add to a soup or sandwich. The product ID is 44700 02289

We use the Campbell's Chunky Grilled Chicken and Sausage Gumbo, product number 51000-15007.

Calories per serving of the original soup is 140
A fourth of the chicken container is 55 calories (half a serving size) for the whole soup (divide by two)

The amount of calories from the vegetables are close to negligible.

So the total calories per serving are less than 200

Some Soup Recipes 2010.02.11

3 Soups

Minestrone Whole Grain Soup


Minestrone (Select Harvest) 1 – 18.6 oz can              160

Tomato Sauce, 1 – 8 oz can                                70

Diced Tomatoes, 1 – 14.5 oz can                          140
     (Use the kind you like best)

Ranch Style Beans 1 – 15 oz can                          390
     (Use less if desired)

Hamburger meat (extra lean) 1 lb                         640
     (Brown in pan with seasonings)
     (It is 160 calories for every 4 oz. you add)
     (Adjust to your desired thickness and calories)

Rice (1/3 of pkg)                                        240
     (you can use Lipton Taco Rice, Spanish Rice,
      or Fiesta Rice which ever you like)

Season to taste with:
                                Garlic Powder
                                Onion Powder
                                Mild Chili Pepper

Put in sauce pan and cook about 10 minutes with lid
Let stand gets thicker.

You can change the calories by changing how much you
add by changing meat to 1/2 pound.

You can also put on top of Baked Doritos             120
You can add some cheese on top                        55

Remember: You need to eat enough to make yourself full, so if you need more leave out the extras and eat another serving of soup.
Mexican Chicken Tortilla

Mexican Chicken Tortilla (Select Harvest)              220
Tomato Sauce                                            70
Diced Tomatoes                                         140
Ranch Style Beans                                      390
    (You can use less if desired)
Chicken (Boiled)      
      (Chicken Tenders boiled)  4 oz 110, using 8 oz   220
Rice (1/3 pkg)                                         240
     (You can use Lipton Spanish Rice, Taco Rice or
         Fiesta Rice)

Season to taste with:
                                Garlic Powder
                                Onion Powder
                                Mild Chili Pepper

Place all ingredient in pan with lid; cook 10 minutes
Let stand to thicken.

                          Divided by 6 Servings         214

     Baked Doritos (Crunch into small pieces)           120
     Grated Cheese                                       55
Make sure you eat enough – you can always leave out
extras and eat more soup to be more filling.

Diced Tomatoes                                           140
Chicken (Boiled 8 oz)                                    220
Add JalapeƱo (seeded) cut into very small pieces       ¯¯¯¯¯

                                                        880 Total

Divided by 4 Servings                                   220 Serving
